Here's the apple cake I love to make (and it can freeze):<BR/><BR/>3 cups chopped raw apple<BR/>1 1/2 cups oil<BR/>2 cups sugar<BR/>3 eggs<BR/>2 1/2 cups sifted flour<BR/>1 tsp salt<BR/>1 tsp soda<BR/>2 tsp baking powder<BR/>2 tsp cinnamon<BR/>2 tsp vanilla<BR/>1 cup chopped nuts (I use pecans)<BR/><BR/>Pour oil into LARGE mixing bowl.<BR/>Add sugar, eggs; mix well.
